Low Carb Mediterranean Pasta Salad

This Low Carb Mediterranean Pasta Salad is packed with an insane lineup of flavours and colours, your most definitely going to have this on repeat.   It's super simple to make with grilled chicken, feta cheese and Mediterranean fresh veggies.  Perfect when you want a hearty pasta salad that will keep you satiated without having to consume all the carbs.

LOW CARB MEDITERRANEAN PASTA SALAD

Ingredients

Salad

1 box of KaiZen Low Carb Pasta
2 mini cucumbers
15 grape tomatoes (sliced in half)
1/2 cup roasted red peppers (chopped)
1/3 cup kalamata olives (chopped)
1 tbsp chives (finely chopped)
1 tbsp dill (finely chopped)
5 oz feta cheese (crumbled)
2 cups grilled chicken (diced)

Dressing

6 tbsp olive oil (Pineapple Collaborative)
1/2 lemon (juiced)
1/2 tsp dijon mustard
Pinch of sea salt (Vancouver Island Sea Salt)
1.5 tsp oregano (Burlap and Barrel)
1.5 tsp paprika or chili pepper flakes (Burlap and Barrel)

Directions:

Prepare the KaiZen Pasta

1. Boil 1 bag of Kaizen low-carb pasta for about 7.5 minutes in salted water.
2. Drain it, then cool it off with cold water to stop the cooking and drain again.
3 Transfer to a large salad bowl.

Prepare the Salad

1. Add the remaining ingredients on top of the pasta in the large bowl.
2. Toss the salad.
Dressing
1. Add all the dressing ingredients to a small mason jar.
2. With the lid on, vigorously shake the jar until the ingredients are well combined.
3. Pour the dressing over the salad and toss once again before serving.
