Low Carb Blueberry Bagels

Homemade Keto-friendly blueberry bagels in under 30 minutes! These are like a blueberry bran muffin but in a bagel! The subtle sweetness from SweetMonk means that there is ZERO sugar and Bake in a Minute provides a low carb, grain free mix that makes baking so easy! Check out this easy recipe for a low carb, Keto breakfast bagel using fresh blueberries.


Servings: 6 | Prep time: 15 minutes | Total time: 30 minutes


Ingredients:

240g Bake in a Minute Sunflower Bread Mix

2 tbsp Lee’s Great Maple Ghee (melted)

4 eggs

50g blueberries

2 tbsp SweetMonk sweetener

2 tsp Burlap and Barrel Royal Cinnamon

1 tsp vanilla extract



Directions:

  1. Preheat oven to 350 degrees
  2. Mix all wet ingredients together, then add in mix
  3. Stir until well combined and fold in blueberries
  4. On a greased baking sheet, spoon out 6 even-sized dough balls
  5. Using a butter knife, hollow out the centre of the ball to create the bagel shape (if you have a bagel or donut mold, you can use that)
  6. Place bagels in the oven for approximately 15 minutes or until a toothpick comes out clean in a fuller part of the bagel
  7. Let rest/ cool for 10-15 minutes before consuming
