Low Carb Keto Frosted Gingerbread

EASY KETO FROSTED GINGERBREAD


In under one hour you can create a festive low carb, grain free AND Keto bread for any holiday gathering! Savour it with coffee for a low carb breakfast, enjoy as a Keto Christmas dessert, or pack it for a potluck! With it’s subtle hint of gingerbread, you’ll be wanting to spread this around like holiday cheer. Follow along for an easy Keto recipe everyone can enjoy!


Servings: 8 | Prep time: 10 minutes | Total time: 40 minutes


Ingredients:

Gingerbread Loaf

  • 200g Bake in a Minute Bread Mix
  • 4 eggs
  • 4 tbsp of butter (melted) (or try Lee's Ghee Plain Jane or Brown Butter!)
  • 1tbsp of cloves 
  • ½ tbsp of cinnamon
  • ½ tbsp of ginger
  • ½ tbsp of nutmeg 

Cream Cheese Frosting

  • 4 tbsp of cream cheese 
  • 2 tbsp of butter
  • 1 tbsp of sweetener

Directions:

Gingerbread Loaf

  1. Whisk egg, melted butter and spices together
  2. Add in Bake in a Minute bread mix and stir until all ingredients are mixed together
  3. Using non stick spray, coat a bread pan and fill with the mixture
  4. Bake at 350 for 30 minutes
  5. Let cool completely before removing from the bread pan then add frosting

Cream Cheese Frosting

  1. Add cream cheese and butter to a microwaveable dish
  2. Microwave for 30 seconds, stirring until blended together consistently
  3. Add in powdered sweetener (if desired) and mix well
  4. Drizzle over top with a sprinkle of cinnamon for a frosty and festive glaze

Tips: 

  • Want to do a Keto dairy-free version? Eliminate the frosting and substitute butter for coconut oil in the loaf
