KETO FRIENDLY CHAI MUFFINS TWO WAYS!


A completely keto friendly Chai Masala Spiced Muffin recipe you can make two ways to fit in your weekly meal prep and to get both your sides and desserts covered!


CHAI MASALA MUFFINS (unsweetened)

Keto Friendly Chai Masala Muffins recipe using Low Carb Indian Spice Blend from Jaswant's Kitchen available on Switch Grocery Canada

Recipe makes 12 regular sized muffins - 1 regular muffin = 1 serving

Prep time: 5 minutes | Baking time: 20-23 minutes


Ingredients:
1 package Good Dee's Muffin mix 

3 eggs

1/3 cup coconut oil (can sub for ghee or melted butter or any oil)

1 tsp vanilla extract

2 tsp Jaswant's Kitchen Chai Masala Spice

Directions:

  1. Preheat oven to 350F
  2. Recommend to leave eggs at room temperature before use and melt your coconut oil or butter before using. Don’t put your eggs in your oil that’s too hot it will cook, also don’t put cold eggs in your oil it will clump your batter. Smooth batter is best when portioning out and making sure your macros are on point.
  3. In a large bowl, mix all ingredients
  4. Scoop your batter in your preferred muffin pan or even a square or round pan
  5. Bake for 20-23 minutes (oven times may vary) and enjoy!

6 mini loaves - 1 loaf = 2 servings

Prep time: 10 minutes | Baking time: 20-23 minutes


Ingredients:

Muffins:
1 package Good Dee's Muffin mix 

3 eggs

1/3 cup coconut oil

1tsp vanilla

1tsp Cinnamon powder

1tsp cardamom powder

1 tsp sweet monk sweetener

2 tsp Jaswant's Kitchen Chai Masala Spice

Glaze:

1/4 cup coconut butter

1/4 cup coconut oil

1tsp Jaswant's Kitchen Chai Masala Spice

1tsp Cinnamon powder

1tsp Maple extract

(optional to add a squirt of Sweet Monk Sweetener)


Directions:

  1. Preheat oven to 350 F
  2. Recommend to leave eggs at room temperature before use and melt your coconut oil or butter before using. Don’t put your eggs in your oil that’s too hot it will cook, also don’t put cold eggs in your oil it will clump your batter.   6. While muffins are baking, you can prep the glaze by melting your coconut butter and coconut oil in a bowl then adding all other ingredients for the glaze. Mix well and leave on the side.
  7. Let the muffins cool completely before drizzling with glaze so it doesn’t melt off your muffins. Enjoy!
