EASY Keto Friendly Thanksgiving & Christmas Stuffing Recipe

It feels like the holidays are sneaking up on us this year! In our family we do our best to keep holidays low carb and grain free. In the fam, we have pre diabetes, dairy intolerance, gluten intolerance (not allergies), picky toddlers, parties we attend and do a potluck style. Most of all, we LOVE food! 

We have a phenomenal stuffing recipe. This recipe below is a great one that's made every year by our customers with Bake In a Minute.

But for our friends who need to make stuffing quickly, see below! You can even use a microwave to make this! 

Ingredients to make Keto Friendly Stuffing - FAST

So here is our take on a Easy Stuffing In A Cup. This recipe is low carb, keto friendly, gluten free, and grain free! 

Recipe adapted by the Bake In A Minute team 

What you need:

1. 1 x Bake In A Minute Mug Bread OR 33g x Bake In A Minute 300g Bag

2. 1 egg and 1 TB oil / butter / ghee to make the bread

3. 1/4 cup cooked sausage

4. 2 TB beef or chicken broth

5. Sauteed Vegetables of choice - Peppers, Celery, Onions, Leeks

We used pepper and celery!

6. Spices: Burlap and Barrel Garlic, Thyme, Black Peppercorns

Herbs: Sage 

Salts: Redmond Real Salt

 

Directions to make the Stuffing

Oven Method

Prepare the bread (per directions on the 300g bag or see below)
1. Pre-heat oven/toaster oven to 350F/180C
2. Combine bread mix with 1 whole egg and 1 TB of oil / melted butter. Mix Well.
3. Optional: Add Redmond Salt to taste (note: the mix is very lightly salted)
4. Line a cookie sheet with parchment paper 
5. Spread the mix on to the parchment paper
6. Bake for 8-10 minutes or until toothpick comes out clean
7. Let cool
8. Dice bread in a "baking friendly" cup
Prepare the stuffing
1. Chop and sautee veggies of choice - I like peppers and celery. 
2. Cook your sausage 
3. Combine 1/4 cup cooked sausage and sauteed vegetables with the diced bread
4. Add Sage, Spices and Salt - Burlap & Barrel Purple Stripe Garlic, Thyme, Black Peppercorns and Redmond Salt 
5. Pour 2 TB chicken broth 
6. Mix well.
7. Bake for 8 - 10 minutes 
Caution: contents will be hot.

Microwave Method

Prepare the bread (per directions on the Mug Bread or see below)
1. Remove Lid and add 1 whole egg and 1 TB of oil / melted butter. Mix Well.
2. Optional: Add Redmond Salt to taste (note: the mix is very lightly salted)
3. Microwave on high for 90 seconds.
4. Let cool
5. Dice bread in the cup
Prepare the stuffing
1. Chop and sautee veggies of choice - I like peppers and celery. 
2. Cook your sausage 
3. Combine 1/4 cup cooked sausage and sauteed vegetables with the diced bread
4. Add Sage, Spices and Salt - Burlap & Barrel Purple Stripe Garlic, Thyme, Black Peppercorns and Redmond Salt 
5. Pour 2 TB chicken broth 
6. Mix well.
7. Microwave for 60 seconds  
Caution: cup and contents will be hot.
