Ingredients:
Muffin Ingredients
⅓ cup coconut flour
⅓ cup granular sweetener
⅓ cup Philosophie Cacao Magic
1 tsp baking powder
1 tsp Origin Vanilla extract
4 eggs
¼ cup melted unsalted butter or coconut oil
¼ cup black coffee (pre-brewed)
¼ tsp Origin Vanilla Salt
Chocolate Glaze (Optional)
1 tbsp coconut oil
Directions:
- Preheat oven to 325F
- Prepare and grease muffin tin
- In a large bowl, combine muffin dry ingredients together
- In a separate bowl, whisk all other muffin ingredients together
- Add in wet ingredients to large bowl with the dry ingredients and stir until smooth
- Pour mixture into muffin tin and bake for 15-20 minutes or until a toothpick comes out clean
- Allow muffins to cool and then prepare glaze
- In a small bowl, add Coco Polo chocolate and coconut oil, then microwave for 40 seconds, stirring halfway through
- Once chocolate has melted completely, pour glaze over each muffin evenly
